Turmeric 'Blue'

Blue turmeric (Curcuma aeruginosa) is a rare variety of turmeric native to Southeast Asia, particularly Thailand, Indonesia, and Malaysia. Unlike the more common yellow turmeric, it has distinctive bluish-purple rhizomes due to anthocyanins, giving it a unique appearance.

The flavor of blue turmeric is similar to yellow turmeric but milder, with a slightly bitter, earthy taste and subtle floral notes, less pungent than yellow turmeric's typical heat. Its texture is firm, fibrous, and slightly tougher, requiring a sharper knife to cut. The vibrant blue interior sets it apart when sliced.
